Are you hosting a 4th of July party? We're having a handful of friends over tonight for swimming and dinner, assuming the rain lets up! We can see a few
fireworks displays from our house, too. The menu is simple this year:

No big party for us. We just got back yesterday evening from our 2-week, North Carolina/Vermont/Rhode Island trip. Just trying to catch up on things today, so
will be grilling hamburgers, hot dogs and corn on the cob. Maybe a green and/or potato(e) salad. Just me and Irma and our daughter, maybe our son and
granddaughter.

Hi JocP-
No, we're not hosting any parties. We are going to my sis-in-law for dinner, then walk towards the river for fireworks. She's cooking a vegetarian meal since another friend she invited is vegetarian. We're bringing Key Lime Bars, which I made this morning and now being chilled in the fridge. I'm interested in the potato salad... If I don't have marjoram, is there something else I can substitute with? |

yk, here's the recipe for the potato salad: Red Potato Salad with Dijon Mustard I imagine you could use any herb you want. The recipe didn't specify fresh or dried. I used fresh. I also added in an extra garlic clove. It's really colorful and flavorful. And SIMPLE, which I love. |

Thanks, JocP. That looks so simple that I'm quite confident I can make it! I am not a huge fan of potato salad w/mayo, so this is perfect!

My company's late - 4Pm was the shooting mark . But that's Ok, they'll be here by & by. Besides, the Pork Butt isn't done yet. Mike, I
pulled up your hints & it's looking good!
Also, Ribs (DH) potato salad, deviled eggs, Southwestern Salad Chips & Clam dip, Hummus & Cupcakes & Blackberry ice cream for desert. The cupcakes & clam dip/chips & bread will be brought. Probably will swim first - that is if they get here soon! Hosting DS1 & family as well as DIL's sis/new hubby & their parents. DS & his FIL go in to the fireworks in a big way. They will bring & do them on the pond dock when the time gets right. The rest of us will be hanging at the pergola. |

The cupcakes turned out to be tiramisu instead - & yum! Also, Calico beans & a pasta salad were brought. I made bourbon slush (recipe from TOP)&
also had one of those frozen margaritas in a pail & the bourbon slush was totally devoured while I have a lot of the frozen margaritas left.
Anyone here need some potato salad - though good, I seemed to have made way too much! It was a good night! Happy 4th to you all!

Bourbon Slush
7 c. water 2 c. sugar 2 c. boiling water 4 tea bags 12 oz frozen lemonade 12 oz frozen oj 3 c. bourbon Combine 7 c water & 2 c sugar bring to boil. Cool. Combine boiling water and tea. Steep. Remove tea bags and cool. After everything is room temperature add lemonade, juice and bourbon. Mix & freeze. Stir a couple of times. Can add 7-up or ginger ale...or our prefered method is to just use without a mix. "I have also made with Rum if you don't like bourbon." The above was posted on TOP. OSB |

I guess mint would make it more southern. I'm not a fan of mint though. Looks like it makes around a gallon with 2 cups of sugar, so it must be real sweet.
Anyway, I visited my brother and sister-in-law. Not much cooking, but great neighborhood fireworks. I know in years past we've had cookouts, but it was hot and we had been out during the day and didn't feeling like starting up the grill. As my brother said: Nothing says Independence Day like take out pizza. |

Yes, ncgrrl, it was VERY sweet! I really think the sugar could be cut in half! I may try substituting Splenda or at least partially next time.
But, I count 15 ups of liquid - three of which are already sweetened (the juice concentrates), plus the two cups of sugar, would be 17 cups total ingredients - So it's closer to two gallons. I used an upside down Tupperware cake cover. Not really pretty, but it did the job. |
